Well Rounded

My sister, Madeline, is two years older than I am so naturally while growing up everything she had I wanted and everything she wore was the coolest thing ever. When we were teenagers, she always wore aviator sunglasses so of course I started wearing aviator sunglasses. For ten years and counting my signature sunglasses are still Ray-Ban Aviators, however, I recently discovered a new shape of sunglasses that I completely adore!

White Jeans

White jeans are a huge summer wardrobe staple, however, most people assume you have to tuck them away for fall and winter. This is totally not true! White jeans {or really any white clothing} can transition to fall/winter quite well with just a few simple adjustments. Adding a structured peplum top or a rich colored blouse plus a pair of brown ankle booties can turn these summer white jeans into a bangin' fall outfit! I enjoy the idea of finishing this outfit with a color blocked clutch or a bright scarf {or both ;)} to contribute a punch of contrast to the whole picture!

Chicken with Honey-Beer Sauce and Cauliflower

Here is another recipe from my September issue of Cooking Light! This recipe is SO easy. I'm definitely going to add this to my weeknight dinner recipe folder or the "Tom you can make this recipe" folder haha! Surprise - I didn't change this recipe at all! It was amazing. I almost licked my plate in order to get the last drop of sauce... The chicken was juicy and delicious! I totally recommend this recipe to everyone. I prepared the cauliflower in almost the same way as my roasted red skin potatoes.

Ingredients for cauliflower:
- one head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon cayenne pepper
- 2 teaspoons garlic powder (I'm all about using minced garlic, however, I feel that the powder works better for these types of recipes in the oven)
- 1 gallon size Ziploc bag

Directions:
1. preheat over to 400 degrees
2. place all ingredients in the Ziploc bag
3. SHAKE
4. pour ingredients on to a baking sheet
5. bake for 40 minutes - flipping the cauliflower every 10-15 minutes in order to cook each part fully

Jungle Curry with Tofu

Every time I order tofu at a restaurant I absolutely love it, however, the idea of cooking it myself terrifies me. The other day I was skimming through my September issue of Cooking Light and found this recipe. The picture sold me instantly {plus I was craving tofu}. I knew I would have to make this on a night that Tom wasn't eating because he won't eat tofu or eggplant.... He had a business meeting until like midnight last night so obviously this was my chance! The only way I changed the recipe {besides adding garlic, duh} was that I used red mild curry paste instead of green curry paste because that was the only kind Meijer had.












Overall, the dish was really good, but I felt that there weren't enough spices. Next time I would add some cayenne pepper and possibly some ginger to make it more flavorful. The tofu was perfect though! I'm definitely going to keep this recipe in order to remember how to cook the tofu correctly! Happy Wednesday!

Transition Time

Yesterday I woke up and it was 50 degrees outside, buuurrrrr. Not that 50 is cold for Michigan but it was like 90 last week {and all my apartment windows were open}! The weather change made it actually sink in that it's almost Fall!! I love Fall clothing; it's so structured with rich colors and textures, however, I do always miss my bright fun summer clothes. Over the last two years of living in Michigan I have come up with a few tricks to transition my summer (and Louisiana/Texas) clothes to Fall/Winter ones. Here are a few of my favorites.

1. Skirts and dresses with sweaters and belts:

This is one of my favorite looks because I love love love skirts and dresses! Living in the south you can wear them year round but in Michigan it becomes more difficult. When it gets super cold I just add leggings!

2. Shorts with knee high boots {with or without tights and/or knee highs}:

I actually wear this combo all times of the year {as seen here} but to make it Fall/Winter appropriate I add tights! 

3. Shorts with ankle booties plus tights {and lots of leather ;)}:

Baked Chicken Milanese with Arugula and Tomatoes


I love meals that leave me unbelievably satisfied without feeling bloated and unhealthy. I found this recipe on my new favorite food blog, Gina's Skinny Recipes, and it does both of those things! I'm a huge fan of chicken so this recipe is right up my alley. Normally, I wouldn't go near breaded chicken though because it often adds a bunch of unnecessary calories but this recipe, with its 250 calories per serving, is perfect and healthy! However, what first caught my eye about this recipe wasn't the calories, it was the tomato, onion, and balsamic vinegar mixture {I'M IN LOVE}. I also knew Tom would love the breaded chicken so I was sold.

Ways I changed the recipe:
- I didn't put basil in the tomato/onion mixture because I forgot it in the fridge at work.... The recipe turned out great without it but I will definitely use it next time because basil adds a nice surprise to veggies
- I added garlic to the tomato/onion mixture because what recipe doesn't call for garlic?!
- That's all folks! Shocker right? I usually change recipes a lot more than this.... :)
